Horseradish White Cheddar Biscuits w/ Garlic Parsley Butter

Not only will there be sugar and chocolate for all of January, but there will also be butter! Lots and lots of butter!

Hence, these really buttery and delicious cheese filled biscuits! These have a cult following within my family! Since I first made them, they have been the most requested "like one of my jams".  You can definitely use any cheese you want but a good, sharp cheddar works best. Also, if you want more of a horseradish flavor add about one teaspoon of prepared horseradish to the buttermilk before adding it to the biscuits.

Horseradish White Cheddar Biscuits

w/Garlic Parsley Butter

What You Need:

  • 2 cups self-rising flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon granulated garlic
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dry mustard
  • 1 cup of shredded horseradish white cheddar cheese
  • 1 cup cold buttermilk
  • 1 stick cold, unsalted butter

For the Garlic Butter:

  • Couple cloves of minced garlic
  • Couple tablespoons of chopped fresh parsley (dried works fine as well)
  • 4 tablespoons butter, melted

What To Do:

  • Preheat oven to 400 degrees
  • In a large bowl, whisk together all of the dry ingredients
  • Use a pastry blender to cut in the butter until small pea-sized crumbs form
  • Add the cheese and toss until coated with flour
  • Add the buttermilk and stir until combined being careful not to over mix
  • Pat the dough into a rectangle about 1/2" to 3/4" thick
  • Cut biscuits with a sharp, round 2" cutter, dipping the cutter into flour between cuts to reduce sticking
  • Pat the scraps together, and cut additional biscuits
  • Place the biscuits on a buttered baking sheet
  • Bake the biscuits for 14 to 16 minutes, or until they're a light golden brown
  • In a small bowl, combine all of the ingredients for the garlic butter
  • Once you remove the cooked biscuits from the oven, generously brush over the tops.

Roasted and Loaded Potato Wedges

While most Food Bloggers are giving you salads and leaner, healthier options, I will buck this trend and give you all the cheese and butter and sugar you can stand!

You're welcome.

First up, these easy and delicious potato wedges. The seasonings can be changed to suit your family's tastes or simply roasted with salt, pepper and granulated garlic.

Loaded Potato Wedges

What you need:
  • 2-3 large baking potatoes cut into wedges
  • 1 Tbs each: smoky paprika, chili powder, granulated garlic, dried thyme
  • 3-4 Tbs Olive Oil (or oil of your choice)
  • Salt to taste
  • 1 cup shredded cheese
  • 1/4 cup diced onions
  • 1/4 cup cook bacon, diced

What to do:
  • Preheat oven to 425 degrees
  • Pour the olive oil and all of the spices in a medium sized bowl and stir to mix
  • Place potatoes in the seasoning mix and use your hands to thoroughly coat the wedges
  • Place the potatoes in a single layer on a sheet pan or cast iron skillet (I prefer this method because it guarantees crispy bottoms!)
  • Roast uncovered for 40-45 minutes or until cooked through and crisp
  • During the last 2 or 3 minutes of roasting, remove pan from oven, sprinkle with cheese and onions and bacon
Serve hot!

"You're fan girling. Over a stove?!"

via
My kid is so shadeful y'all.  She and her dad made real good fun of me over my excitement for a stove.  However, I am honestly and without shame, fan girling over a stove.  It is a gas freestanding double oven! I swoon every time I see it! Look.At.It!!!!!

via
I didn't even know I needed it until I saw it in one of my food magazines...lolol.  I can totally justify the purchase to E. Thanksgiving will be at our house this year and I can just add saving for this stove to the long list of projects and purchases that have to be completed or buy before November.  Imagine the time saved and the food that will be cooked in this baby!!
I want her y'all. I want her bad!

What is something you are currently coveting that you absolutely MUST have?

The Friday Five plus 2: Time Off

Happy New Year!!

Yeah, yeah I know I am late but it’s still early in the New Year so it counts!

Plus I have not written an actual post since last year! LOL

After being on break for so long my blogging mojo has been off. I have a full list of drafts that need editing and pictures attached.

But...#lazy

Dr. LBeezy (my momma) was here for a week and I loved being able to spoil her and she loved spoiling B.

E loved that she was here to be on his side!  Mom always takes their side. She's like “it takes a special man to be with my daughters. I pray for my son-in-laws daily!”  See how shadeful she is! LOLOL

Here are a couple of the dishes I made for her while she was here.  I loved cooking for her so much:

Chili Rubbed Fresh Snapper with Bacon Wrapped Shrimp and Grilled Vegetables atop (I love that word! Lol) Cilantro Lime Basmati Rice. I had a similar dish at a local restaurant and I could not wait to make it at home.

Pan Seared Mahi Mahi in a Lemon Garlic Butter Sauce, Thyme Poached Lobster and Fresh Sautéed Spinach. This was another restaurant inspired dish. I will post a version of this one and the snapper at a later date

Oh and this spaghetti with meat sauce.

LBeezy mentioned how she hadn’t had any good spaghetti in a long while.  When she went to do some last minute Christmas shopping I surprised her with lunch. I also made her, my now family famous, Horseradish Cheddar Biscuits with Garlic Parsley Butter (recipe coming soon).

Every time she visits, mom buys me flowers.  That’s her thing. She visits me or my sister: flowers!  How thoughtful right!? She has an awesome green thumb and a good plant eye. These lasted three weeks after she left!  These beauties also prompted me to make a resolution: More fresh flowers in 2014.

My mom also won't sit still, so she cleaned my kitchen after every meal, grocery shopped and bought me these shelves I have been coveting for a year!  They were my birthday present! I was for real near tears!

via
I will share my progress on outfitting those shelves (I have two) over on Instagram (@SoGirlCitySwirl).  This is my inspiration decor though. I think this is so funky and eclectic. I haven't decided if I am going to spray paint them. My sister @TheNinahBee is trying to convince me that it is a good idea! We'll see!

B and I will visit LBeezy this summer.  Our plan is to road trip to Maryland and DC and one other place I can’t recall right now.  We can’t wait!

I hope you all had a great time off! I promise I will be back with recipes next week!

Flat Ironed and Trimmed

I try to get my hair professionally flat-ironed and trimmed once a year, typically during my birthday weekend.  This almost made me miss a relaxer until I had to curl it myself the next evening for shenanigans with friends.  I kept it straight for almost a week!
