Roasted and Loaded Potato Wedges


While most Food Bloggers are giving you salads and leaner, healthier options, I will buck this trend and give you all the cheese and butter and sugar you can stand!

First up, these easy and delicious potato wedges. The seasonings can be changed to suit your family's tastes or simply roasted with salt, pepper and granulated garlic.  

Loaded Potato Wedges

What you need:
  • 2-3 large baking potatoes cut into wedges
  • 1 Tbs each: smoky paprika, chili powder, granulated garlic, dried thyme
  • 3-4 Tbs Olive Oil (or oil of your choice)
  • Salt to taste
  • 1 cup shredded cheese
  • 1/4 cup diced onions
  • 1/4 cup cook bacon, diced

What to do:
  • Preheat oven to 425 degrees
  • Pour the olive oil and all of the spices in a medium sized bowl and stir to mix
  • Place potatoes in the seasoning mix and use your hands to thoroughly coat the wedges
  • Place the potatoes in a single layer on a sheet pan or cast iron skillet (I prefer this method because it guarantees crispy bottoms!)
  • Roast uncovered for 40-45 minutes or until cooked through and crisp
  • During the last 2 or 3 minutes of roasting, remove pan from oven, sprinkle with cheese and onions and bacon
Serve hot!
